Joseph Lidgerwood, the Tasmania-born chef-owner of Evett, a cosy Michelin-starred restaurant in Seoul’s affluent Gangnam district, is something of a culinary nomad. He’s cooked at some of the world’s most notable restaurants and trained under some of the industry’s most revered chefs. Yet, when his travels brought him to Korea, he was so enamoured with its culture that what was meant to be a short stint on the peninsula ended up turning into a three-year love affair that he still finds incredibly rewarding and informative.
