Gyuban is a Korean restaurant located in Shinsa-dong, Seoul. Chef Kim Ji Young opened this place. She was the culinary director for the show, and she has ten years of experience running her own membership dining club in Hannam-dong. She recreates forgotten dishes using old cook books and records of recipes, and wants to continue upholding Korean culinary tradition.
What makes Gyuban special is the stories they serve alongside each dish: they tell diners about the history related to certain dishes, and funny stories about the lives of our ancestors. It’s a delicious and educational experience. For instance, when people think of sashimi, most think of Japanese sashimi dipped in wasabi. But here, visitors find out that raw fish was enjoyed by Koreans long before, served with fresh ginger and thinly minced tangerine peels. Moreover, guests will learn that Koreans were the first-ever people to marinate meat according to existing records. During the explanation about marinated meat, they will bring out pork marinated in soy bean paste. Their bamboo shoot cold salad is marinated with persimmon juice. The infamous minced whale meat that brought back Jang Geum’s wasted palate, and other dishes that appeared in the show are particularly popular among tourists.
Gyuban also hosts private classes for those who make prior reservations. The class is catered to the particular interest of the guests. The most popular theme is none other than kimchi. Participants are invited to taste kimchi flavored with soy sauce, and kimchi made with fresh abalone. There is so much more to kimchi than the ubiquitous red cabbage variant.
