Recently, Korean wine has become popular among travelers to Korea. Until now, only raw rice wine or distilled liquor had been readily available. But traditional liquors have distinct flavors, and they are not easy on the palate at first.
Korean summers are typically wet, which results in less sweet grapes when foreign varietals are grown here. Instead, Korean winemakers use local ingredients with higher sugar content. Foreigners find this variation surprisingly novel. Omija, Korean wild grapes, kiwis, and plums are but a few ingredients used in making Korean wine. For instance, Omija is the fruit that tastes like five fruits; Korean wild grapes are smaller than normal grapes and has thicker skin.
Bicena presents 7 types of Korean wine, evenly selecting from various region and variety. It is expected to diversify its wine collection by adding peach and plum flavors as well. The first winner of Korea Best Sommelier Contest handpicks Korean wines that receive favorable review from various contests and fairs. The wines that are most popular are “OmyRosé” by Omynara and “Chungsu” by Grand Coteau: sparkling and sweet white wines. Samplers prepared by Bicena are also one of the top menu, providing a little bit of a variety of Korean wines.
Most importantly, what distinguishes Bicena from other wine bars is that visitors can taste the Korean food and a marriage of Korean wine in this place. During K-Wine Gourmet Week held in November, 2020, a dry aged sirloin steak was served as a main menu along with the 2015 Vintage Sudosan Sanmeoru Winery Kreaté, a dry red wine made of sanmeoru (wild grape). This combination had been praised by visitors as the aged gastronomy got along well with the wine.
