Blgre is a name created by combining the first letters of the three primary colors of light: Blue, Green, and Red. Like the intersection of these three primary colors creates white, it embodies an open-minded approach to reinterpreting Korean cuisine. It represents the intention to express Korean cuisine in a new way, with an open mind and creativity. The interior space with a white tone incorporates media art that represents the sense of seasons, adding dynamism to the interior design. The dishes served in tapas style are based on recipes from ancient literature but reinterpreted with a modern touch. The cuisine at Blgre utilizes fermented ingredients such as ganjang (Soy Sauce) and doenjang (Soybean Paste ) made from Paju soybeans and kimchi. The dishes aim to preserve the original flavors of the ingredients. Various Korean liquors and wines are available, allowing for pairing with Korean-style tapas.
